| Preheat
oven to 350 degrees. Quarter and core 1 ½ cups of fresh apples. No need
to peel them. Chop apples until pieces are the size of raisins. Set aside
in a medium sized bowl beat 2 eggs and ¼ cup vegetable oil. Add Mom's Best
Ever Apple Cake Mix and beat until just moistened. Fold in chopped apples
gently. Batter will become more fluid as apples are mixed. Coat 8x8 pan
with cooking spray. Pour batter into pan and bake for 55 minutes or until
a wooden pick inserted into cake comes out clean. Cool. Serve with vanilla
ice cream or whipped cream. You may also want to add ½ cup chopped walnuts
or pecans to the batter. Packaged
